Thursday’s Quarter Recipe

strawberry breakfast bars

Super Strawberry Bars

These are great for breakfast!!

1cup flour (I used whole wheat pastry flour)

1 cup rolled oats

1/2 cup butter or margarine, softened (I used 1/2 coconut oil and 1/2 butter)

1/3 cup light brown sugar (I use sucanat)

1/4 teaspoon baking powder

1/8 teaspoon salt

3/4 strawberry jam (or whatever flavor)

350 degrees

In a large bowl, mix everything together except the strawberry jam.

Measure out 2 cups of this mixture and press it into the bottom of the pan.  Make sure you cover the entire bottom of the pan . (I doubled this recipe and used a glass 9×12.  I have an odd shaped glass 11×7(thin bars) or I use an 8×8 for single, thicker recipes)

Using a large spoon, spread the jam on top the mixture on top of the mixture in the pan. Spread it evenly all over.

Take the mixture that was left in the bowl and spread it over the jam.  Press it down lightly.

Bake 25 minutes.  Remove the pan from the oven, allow it ot cool for at least 15 minutes.

Cut and share!

Made these late last night, to serve vegan friends today. I used coconut oil & Earth Balance. Yum! -Nancy in NC
