Thursday’s Quarter Recipe…on friday

mmmmmmmmmmmm Not really a recipe.  More of a look into our homemade suhsi nights.

You can roll just about anything into your sushi.  We usually do different combos of carrots, avocados, cucumbers, shrimp and crab meat (real from a can, not the sticks of fake crab). Sometimes we do green onions and asparagus too.  You will need some sheets of Nori and cooked and cooled sushi rice.  I cook my rice and then add some salt, rice vinegar and sugar and let it cool  for a few hours.  It should be a subtly sweet, salty, sticky combo.  You can use brown or white rice..or like me..ground up cauliflower for a more raw version.   Although this makes for a messy roll that I eat like a burrito instead of pretty little cut up rounds.

DSC_7445First you spread the sticky rice onto the sheet of nori with the back of a rice paddle or spoon. Leave a little space on the sides and the top half inch or so.  Now add your stuff to the bottom of the roll.

DSC_7451Now firmly roll your sushi, sort of pressing down evenly across the roll while you roll it up.  Don’t worry if it comes out loose-it will still taste good even if it looks bad!  When you get to that last 1/2 inch, dip your finger into the cold water and run it along the edge of the nori to help seal it up.

Keep dipping your knife into cold water before each cut..it keeps the rice from sticking.  Now dip those tasty rounds into some tamari or soy sauce with wasabi added into it for some spice.  I then dip mine into sesame seeds for some crunch.  And lots of pickled ginger.

My kids love sushi nights..we open up the leaves in our table and take turns making requests and rolling.  The chopping takes some time as does the, at the table prep, so we usually do this on a weekend.

I usually make miso soup and agi dashi dofu on sushi nights.  I love seaweed!!  This may not float most peoples boats but while walking on the seaweed covered beaches in Maine I had a craving for my  miso seaweed soup.

I’ll save those recipes for another day…morning smoothies requests are turning into irate orders!  Gotta go!

  1. Looks Yummy! we too make sushi. We have started being lazy with the rolling though and we put everything on the table, but cut the nori into smaller square pieces and make hand rolls. then each piece can be a different combo!

  3. That is funny–we have recently (after getting addicted to Trader Joes Sushi rolls) started doing sushi night (except one child doesn’t like nori, though she likes kombu so we make rice balls as well.)
