I made this raw potato salad this weekend and it was really good! Definitely tastes better when it’s not ice cold and the dressing does get runny the longer it sits, but it still tasted good a few days later.
RAW POTATO SALAD
2 c diced jicama
1/4 c diced yellow pepper
1/4 c celery
1 T minced fresh rosemary
2 T minced green olives
1/4 avocado, smashed
1/2 red onion thinly sliced
fresh parsley
Now for the dressing:
2 t tahinin
1/4 t ground cumin
1 1/2 T lemon juice
2 T water
2 t parley
1/4 t nama shoyu
1/4 t agave
pinch of chili powder
and more than a pinch of salt
I blend all the dressing ingredients in my Vita-Mix. Dressing should be a little thick as it does thin out after the potato salad is all mixed up.

Hey I was reading thru your beautiful blog, and saw a post about opening a raw coconut, I tried that once and got so frustrated with it that a through it out the window, a few weeks later I was at Krogers and saw that they had raw coconut meat cryovaced, I was able to make about a quart of “fresh” coconut milk, It was alright. Then I found an excellent raw food website that had the best raw coconut butter ive ever had http://www.naturalzing.com/ its by a brand artisana it has chunks of raw coconut in it, its 100% raw and f-ing delicious, i use it in my green smoothies, fruit smoothies, and i once got crazy and made raw indian spiced salad dressing for my spinach salads, you should check it out. anyways hope to see ya again real soon, tell ginger i said hi
Honest question: Is it supposed to have potato in it, or does the jicama provide a potato-y starch?

I used jicama to make mashed “potatoes.” It looked exactly like mashed potatoes but the jicama was so sweet that I didn’t really like it. I think the “potato” salad sounds much better since there would be a variety of flavors. So are you using non raw tahini and the raw nama shoyu? I haven’t bought the nama shoyu since it’s so expensive. I’ve been using liquid aminos in place of it. Since I’ve been making an almost raw hummus I’ve been wanting to order some raw tahini. I’ll write up a post for the hummus, it’s so good.

Amanda—Hehehe No, no potato. The jicama is the potoato. It is even called a mexican potato. But its more juicy like an apple-or a raw potato. This is yummy!
Sheila—I am using raw tahini. I bet the jicama was too sweet for mashed potatoes. This has an interesting taste. It is like a creamy potato salad. Look forward to your hummus recipe.
Ok I’ll try it. I have another recipe that calls for jicama and so that could be a theme this week!

I’m allergic to sulfites and can’t have potatoes, so this would be a good substitute! I have heard of jicama, but have not tried it.. where can you buy it? This salad would have been a yummy addition to our picnic today!
