Hey! My friend Lisa from 5 Orange Potatoes suggested I check out your blog, which is beautifully inspiring! :)

I'm allergic to sulfites and can't have potatoes, so this would be a good substitute! I have heard of jicama, but have not tried it.. where can you buy it? This salad would have been a yummy addition to our picnic today!

Please stop by and say hi sometime. :)

Sheila---I am using raw tahini. I bet the jicama was too sweet for mashed potatoes. This has an interesting taste. It is like a creamy potato salad. Look forward to your hummus recipe.

Amanda---Hehehe No, no potato. The jicama is the potoato. It is even called a mexican potato. But its more juicy like an apple-or a raw potato. This is yummy!

I used jicama to make mashed "potatoes." It looked exactly like mashed potatoes but the jicama was so sweet that I didn't really like it. I think the "potato" salad sounds much better since there would be a variety of flavors. So are you using non raw tahini and the raw nama shoyu? I haven't bought the nama shoyu since it's so expensive. I've been using liquid aminos in place of it. Since I've been making an almost raw hummus I've been wanting to order some raw tahini. I'll write up a post for the hummus, it's so good.

Honest question: Is it supposed to have potato in it, or does the jicama provide a potato-y starch?
Sounds yummy!
